Cucumber & Red Onion Salad

A
n easy, low-calorie and tasty side dish you'll find yourself making again and again.

Ingredients
  • 2 cups spiralized cucumber (about 2 medium-sized cucumbers)
  • ¼ cup red onion, thinly sliced.
  • 2 Tablespoons seasoned rice vinegar
  • 1 teaspoon sesame seeds

Instructions
  1. Allow cucumber to drain in a colander for about 20 minutes and blot dry with a towel.
  2. Toss cucumber and red onion with seasoned rice vinegar.
  3. If desired, toast sesame seeds by heating in non-stick pan for about 5 minutes or until sesame seeds begin to brown and are fragrant. Stir frequently.
  4. Drain off excess liquid before serving.
  5. Top with sesame seeds.

I'm not sure if I can eat this one. I hate onions, especially that red one. Whenever I eat a particular dish, and I saw that on my food, I would definitely remove it. I'd rather eat white onion on a kebab. That is more tolerable than the red onion. Well, I guess I would show this to my mom and dad, maybe they'd like it.

Wow! Thank you for posting the instruction on how to make this cucumber onion salad. Actually, I've been eating this salad for almost 10 years as my appetizer. But I'm sad to know that there are still people who are not familiar with it. I feel bad for them because they are losing a huge part of their eating habits. I hope this post will spread more!
